This year the summer came ahead of its time and didn’t leave us with much time to acknowledge its arrival. But I loved it just as much as every other time. I welcomed the sun in my soul and I let it heat me deep inside. I kept some heat to last me through the winter so I can always return to my summer. Every summer has a story and, this year, one of love and sweet life was written. I welcomed the days with happiness and enjoyed them with the sweet juicy fruits of summer.
Blueberry pancakes are a sweet delight one can enjoy for all throughout the day but there’s nothing better than starting the day surrounded by delicious flavors and scents.
The sweet taste of pancakes is perfectly complemented by the sour taste of berry yogurt.
Pancakes are familiar and friendly, and in the intimate space of the kitchen, their taste can create or recall memories.
1 cup all-purpose flour
2 tablespoons white granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cup buttermilk, shaken
1 large egg
1 tablespoon butter, melted
1/4 teaspoon vanilla extract
1/2 cup blueberries
In a medium bowl, mix together flour, sugar, baking powder, baking soda and salt.
In a small bowl, measure out the buttermilk. Add the egg, melted butter and vanilla extract; beat until thoroughly combined.
Add the wet ingredients to the dry ingredients and gently mix until combined,but not over mix. Gently fold in the berries in the batter.
Heat up the pan over medium heat and melt 1/2 tablespoon of butter. Scoop 1/4 cup batter onto the warm pan. Cook for 1 to 2 minutes, until small bubbles form on the surface of the pancake, and then flip to cook on opposite side for about 1 minute, or until golden brown. Transfer cooked pancakes to a baking sheet and place in oven to keep warm. Proceed with the rest of the batter until you’re done. Serve the warm pancakes topped with a dab of melted butter and powdered sugar and a handful of berries.
